Getting Your Dish Pit Ready for the Holiday Rush

November and December bring office parties, family dinners, private events, and packed weekend services. For most restaurants, hotels, and clubs, that means more covers, more plates, and more pressure on the dish room than at any other time of year. At Envirocare, we’ve worked with kitchens across Virginia since 1984, and the operations that handle the holidays best prepare before the rush starts. Here’s where to focus.

1. Schedule Preventative Maintenance Now

The worst time to discover a worn pump seal or a failing heating element is in the middle of a Saturday night event. A preventative maintenance visit before the busy season lets a technician catch small problems before they grow. Ask for a check of wash and rinse arms, curtains, door seals, heating elements, and chemical feed lines.

2. Delime Before Volume Picks Up

Scale buildup lowers heating efficiency, clogs spray arms, and leaves dishes looking cloudy. If your machine hasn’t been delime-treated recently, do it before the rush instead of during it. A clean machine runs faster and more consistently during peak volume.

3. Verify Your Sanitizing Step

High-temp machines rely on hot final rinse water to sanitize. Low-temp machines rely on chemical sanitizer. Either way, check that your machine is reaching the temperatures or sanitizer concentration listed on its data plate. Test strips and temperature checks take a minute, and a health inspector will look at them too.

4. Stock Up on Chemicals and Supplies

Running out of detergent, rinse aid, or sanitizer during a holiday event is avoidable. Look at last year’s usage, plan for the extra volume, and keep enough on hand to cover a busy week. The same goes for gloves, can liners, paper products, and restroom supplies, which all move faster when guest counts rise.

5. Retrain Your Dish Team

Holiday staffing often brings new or seasonal employees into the dish room. Take a few minutes to walk everyone through proper scraping, racking, loading, and the daily cleaning routine for the machine. Overloaded racks and skipped scraping slow the whole line down and lead to rewashing.

6. Know Who to Call

Things still break, even with good planning. Make sure every manager knows how to reach your service provider after hours. Envirocare offers on-call technical support and repairs 24 hours a day, 365 days a year, and we keep parts on hand to help prevent downtime.
